The glutamic acid is then separated and purified. Sodium is added to create monosodium glutamate, which is crystallized, dried, and prepared for use as a seasoning.
The industrial equipment is modern, but the central principle—microorganisms converting a food source into another useful compound—is familiar to anyone who works with fermentation.
This does not mean MSG and traditional fermented foods are the same product.
